Annabel Karmel’s vegetarian noodles

Enjoy a taste of the Orient with these delicious noodles

  • 120g egg noodles
  • 1 small onion, sliced
  • 1 small carrot 
  • 1 small leek
  • 20ml sunflower oil
  • 150g mixed peppers 
  • 75g baby courgettes 
  • 1 clove garlic, crushed
  • 50g beansprouts
  • 1 tbsp teriyaki sauce


  • Step 1

    Cook the noodles according to the packet instructions and drain. Prepare all of the vegetables by cutting them into thin strips like ribbons. 

  • Step 2

    Stir fry the onion, carrot and leek in the oil for 5 minutes. Then add the peppers, courgettes and garlic for 5 minutes.

  • Step 3

    Add the beansprouts and noodles. Pour over the teriyaki sauce. Season to taste and serve.
