
Chicken, leek and raisin pasta bake

- 2 Leeks
- 2 Red onionssliced
- 1tbsp Lemon juice
- 125g Mushrooms
- 2 Garlic clovespeeled and finely chopped
- 1tbsp Olive oil
- 225g Wholewheat pasta
- 60g Raisins
- 225g Cooked chickenchopped
- 375g Soft cheese
- 125g Cheddar cheesethinly sliced
- 2tbsp Parmesangrated
Method
step 1
Slice the leeks and chop the mushrooms. Slice the onions and mix with lemon juice.

Fry the leeks, onion, garlic and mushrooms in oil until soft. Remove from the heat and add to a large mixing bowl.

Cook the pasta, then drain and mix with the vegetables.
step 4
Add the chicken, raisins and beaten soft cheese to the pasta and vegetables.

Spoon into a ovenproof dish and cover the top with the Cheddar cheese slices, sprinkled with Parmesan.

Bake for 25-30 minutes at 200°C/Gas Mark 6.
