Chicken, leek and raisin pasta bake

2 leeks, sliced

2 red onions, sliced

1 tbsp lemon juice

125g mushrooms

1 tbsp olive oil

225g wholewheat pasta

60g raisins

225g cooked chicken, chopped

2 cloves garlic

375g soft cheese

125g Cheddar cheese, thinly sliced

2 tbsp Parmesan cheese, grated



  • Step 1

    Slice the leeks and chop the mushrooms. Slice the onions and mix with lemon juice.

  • Step 2

    Fry the leeks, onion and mushrooms in oil until soft. Remove from the heat and add to a large mixing bowl.

  • Step 3

    Cook the pasta, then drain and mix with the vegetables.

  • Step 4

    Add the chicken, raisins and beaten soft cheese to the pasta and vegetables.

  • Step 5

    Spoon into a ovenproof dish and cover the top with the Cheddar cheese slices, sprinkled with Parmesan.

  • Step 6

    Bake for 25-30 minutes at 200°C/Gas Mark 6.
