Chicken, leek and raisin pasta bake

Ingredients
- 2 Leeks
- 2 Red onions, sliced
- 1tbsp Lemon juice
- 125g Mushrooms
- 2 Garlic cloves, peeled and finely chopped
- 1tbsp Olive oil
- 225g Wholewheat pasta
- 60g Raisins
- 225g Cooked chicken, chopped
- 375g Soft cheese
- 125g Cheddar cheese, thinly sliced
- 2tbsp Parmesan, grated
Method
- STEP 1
Slice the leeks and chop the mushrooms. Slice the onions and mix with lemon juice.
- STEP 2
Fry the leeks, onion, garlic and mushrooms in oil until soft. Remove from the heat and add to a large mixing bowl.
- STEP 3
Cook the pasta, then drain and mix with the vegetables.
- STEP 4
Add the chicken, raisins and beaten soft cheese to the pasta and vegetables.
- STEP 5
Spoon into a ovenproof dish and cover the top with the Cheddar cheese slices, sprinkled with Parmesan.
- STEP 6
Bake for 25-30 minutes at 200°C/Gas Mark 6.
