Fusilli with bacon and broccoli

A quick, light and healthy meal, easily doubled to feed the whole family


Serves 2



4 rashers lean back bacon

225g fusilli or other pasta shape

75g broccoli florets

1 (200g) pot of fresh salsa dip


Grill the bacon under a hot grill for 8-10 minutes, turning once, until crisp. Snip into bite-sized pieces and set aside.

2 Meanwhile, cook the pasta in boiling salted water for 10 minutes, or according to packet instructions, adding the broccoli florets to the pan for the final 4 minutes of cooking.

3 Drain the pasta and broccoli and return it to the saucepan. Stir in the bacon and the salsa sauce and serve straight away.
