Lentil, carrot, celery and leek soup

1 chopped onion

1 tablespoon vegetable oil

2 chopped carrots

1 chopped leek

1 stick chopped celery

Juice of 1 lemon

2 pints vegetable stock

250g lentils


  • Step 1


    1 Heat oil in large pan. Add onion and carrots, medium heat for 5 minutes.

    2 Add leek and celery and cook for further 5 minutes.

    3 Add lemon juice, veg stock and lentils and simmer for 20 minutes.

    4 Blend until smooth, just leaving a few chunks of vegetables. Add seasoning, herbs or garlic to taste.

    Suitable from 6 months, full of iron and vitamins, quick and easy to make. Makes 10 servings for a 3 year old.

    hints & tips

    This recipe is great as any of the vegetables can be swapped or deducted depending on what you have in. Serve with cheese on toast or crusty bread.
