Red split lentil soup

ingredients

400g red split lentils

2 medium sized potatoes

1 white onion

1 garlic clove

500g tomato passata

2 vegetable stock cubes

6tbsp tomato ketchup

1tbsp sugar

salt & pepper

1.5 litre water

500ml sour cream

Method

  • Step 1

    method

    1 Chop the potatoes in small pieces.

    2 Boil the potatoes and lentils with the water and the vegetable stock for approx 15 min on low heat.

    3 Add finely chopped onion and the rest of the ingredients and boil on low heat for another 20 minutes.

    4 Taste and serve with the sour cream. Enjoy!
