Sweet potato and courgette curry

A warming puree for Autumn nights

You’ll need:

1 large courgette or 2 smaller ones

1 medium sized sweet potato

1 pouch of baby Mild Vegetable Masala Sauce (suitable from 6 months)

A dash of olive oil

Makes 4-6 portions

What to do:

1 Wrap the sweet potato in silver foil and place in the oven for 30 minutes at 350⁰C.

2 Cut the courgette into small cubes and gently fry in the olive oil for 5 minutes, or until soft.

3 When cooked, remove the sweet potato from the oven, take off the skin and mash until lump-free.

4 Gently warm the Mild Vegetable Masala Sauce in a pan and then pour over the sweet potato mash.

5 Mash up the courgette and add to the rest of the ingredients.
