Step 2 Add the sliced tomatoes to the pan and cook them down until mushy. Step 3 Beat the eggs together with the crushed chicken stock cube, soy sauce and a little salt and pepper. Step 4 Add the beaten egg mixture to the tomato and onion and cook for a couple of minutes, or when just beginning to set. Step 5 Serve the eggs on their own or pile on top of some toasted ciabatta.
