Annabel Karmel’s Scrambled Eggs with Tomato and Onion

  • Makes 1 portion

A great way to introduce vegetables into a delicious egg favourite

  • 15g butter
  • 1 small onion, finely chopped
  • 1 small clove garlic, finely chopped
  • 100g cherry tomatoes, sliced
  • 2 eggs, lightly beaten
  • A pinch of chicken stock cube
  • 1tsp soy sauce
  • A little salt and ground black pepper


  • Step 1

    Melt the butter and sauté the onion and garlic for 3 minutes, stirring frequently until softened.

  • Step 2

    Add the sliced tomatoes to the pan and cook them down until mushy.

  • Step 3

    Beat the eggs together with the crushed chicken stock cube, soy sauce and a little salt and pepper.

  • Step 4

    Add the beaten egg mixture to the tomato and onion and cook for a couple of minutes, or when just beginning to set.

  • Step 5

    Serve the eggs on their own or pile on top of some toasted ciabatta.
