Annabel Karmel’s snake sandwiches
- Makes 20
S-s-s slithery sarnies - the perfect way to serve some nutritious party food (as well as jam sandwiches)

For the sandwiches…
- 6 slices white bread
- 1tbsp peanut butter
- 1tbsp strawberry jam
- 2tbsp cream cheese
- 1 small carrot, peeled and grated
- 1tbsp snipped chives
- 4 slices brown bread
- A little butter, softened
- ¼ cucumber, sliced
- 5cm fluted cookie cutter
For the decoration…
- The ends of 1 cucumber
- 2 circles of red pepper (cut using the top of a piping nozzle)
- Strip of ham, cut into a forked-tongue
- Kiwi fruit, sliced (optional)
- Chives (optional)
- 1 cocktail stick, cut in half
Method

Step 1
Using white bread, make one peanut butter and jam sandwich and two cream cheese, carrot and chive sandwiches. Spread the brown bread with the butter and make two cucumber sandwiches.

Cut out four rounds from each sandwich using your cookie cutter.

Arrange the rounds in a snake shape on a large platter. Use the ends of the cucumber to make the head and tail. To make eyes, attach the pepper circles using the cocktail stick halves. Cut a mouth in the front of the head, and insert the ham.

You could also create a grass effect with kiwi slices and chives.
