Beef and sweet potato

This beef and sweet potato mash is great served with rice or cous cous, suitable from 8 months

- 2 tbsp olive oil
- 1 clove garlic, crushed
- 2tsp paprika
- 1 onion, chopped
- 150g beef steak, cubed
- 1 tbsp flour
- 100g mushroom, sliced
- 275g sweet potato, chopped
- 300ml very low salt chicken stock
- 10 dried apricots, chopped
- 2 whole bay leaves
- 1 orange, juiced

Method

Step 1
Fry the onion and garlic in oil until soft.

Step 2
Coat the beef chunks in flour, add to the pan and fry until browned.

Add the mushrooms and paprika, stirring until cooked through.

Add the sweet potato, stock, orange juice and chopped apricots.

Bring to the boil, then transfer into a casserole dish and cook in the oven at 180C/350F/Gas mark 4 for one hour and 20 minutes.

Step 6
Mash or blend to the required consistency.
