Advertisement Watermelon and herb salad with grilled halloumi – pregnancy recipe 20 minutes Serves 4 Fresh, summery salad, full of the flavours of Greece and packed with antioxidant-rich watermelon Share on Facebook Share on Twitter Share on Pinterest Share on WhatsApp Share on Reddit Share on Reddit Share on Tumblr By BBC Good Food 1 small watermelon (or other ripe melon), about 1kg 1 small bunch each of coriander, flat leaf parsley and mint (leaves only) 240g pack of halloumi cheese (made from pasteurised milk), cut into 8 slices zest and juice of 1 lemon 4 tbsp olive oil Advertisement Method Step 1 Halve the watermelon lengthways. Slice into eighths, cut away the skin and pith and then slice into 1cm thick slices to make small triangles. Step 2 Place the melon in a large bowl and add all the herbs. Step 3 Heat a griddle pan until very hot and griddle the halloumi slices for 30 secs on each side until well browned. Cool for a few moments before adding to the salad. Step 4 Whisk the lemon juice and olive oil together and season to taste. Pour the dressing over the salad ingredients and toss gently to combine.
