Marbled loaf cake recipe

This marbled loaf cake recipe is the perfect Easter treat!

Topped with Galaxy Enchanted eggs and Maltesers® Bunnies, this delicious treat is so simple to make – and you can get the whole family involved!

Whether you’re planning a special get-together or are simply looking for ways to keep your child busy during the school holidays, Easter is the ideal time to get baking – and it doesn’t get much better than this marbled loaf cake.

While its wonderful patterned sponge might look a little tricksy to create, the truth is it’s deceptively easy. Perhaps best of all, the cake is topped with a runny chocolate ganache and Maltesers® Bunnies and Galaxy enchanted eggs so the fun decorating possibilities are endless!

Ingredients

buttermilk spread 200g

caster sugar 200g

self-raising flour 200g

medium eggs 3

baking powder 1 tsp

vanilla extract 1 tbsp

cocoa 2 tbsp

semi-skimmed milk 1 tbsp

To decorate

buttermilk spread 50g

icing sugar 100g

cocoa 1 tbsp

Mini Maltesers® Bunnies 3 white, 3 milk

Heat the oven to 180C/160C fan/gas 3 and grease and line a 1lb/900g loaf tin with baking paper. Put the buttermilk spread, caster sugar, self-raising flour, eggs, baking powder and vanilla extract in a food processor and whizz until smooth. Remove about half of the mixture and place in a separate bowl, then add the cocoa and milk to the remaining mix. Whisk until the cocoa is thoroughly combined.

Using a small spoon, blob alternating colours of the mixture into the prepared tin and use a skewer or a knife to swirl together. Take care not to overswirl in case your mixture turns one colour.

Place in the oven and bake for 45-50 minutes, or until a skewer comes out clean. Once done, remove from the oven and leave to cool in the tin for 5 minutes. Then, remove from the tin and cool completely on a rack.

For the decoration, whip the spread with the icing sugar and cocoa until light and fluffy, then swirl over the top of the cooled cake and decorate with the eggs and Maltesers® Bunnies.

HELPFUL HACKS

You can make the cake striped by alternating layers of the mix, rather than marbling it.

For a pink and white cake, add pink food colouring to one half. You can also make the ganache white by adding white chocolate instead of mix and topping with Maltesers® White Chocolate Bunnies.

Don’t want to make ganache? Drizzle the cake with dark or milk chocolate and decorate with Maltesers® White Chocolate Bunnies, or drizzle with white chocolate and decorate with Maltesers® Milk Chocolate Bunnies.

Add orange zest to the mix to make it chocolate orange and decorate with Maltesers® Orange Chocolate Bunny.
