Country vegetable casserole

This warming casserole is a great way to introduce new veg to your baby's diet, suitable from 9 months

  • 1 medium leek
  • 2 whole carrot
  • 2 whole potato
  • 2 whole sweet potato
  • 1 whole courgette
  • 2 slices brown bread
  • 30g cheese (cheddar or similar), grated
  • 1 tbsp chive
  • 1 pinch salt
  • 300ml very low salt vegetable stock
  • 2 tbsp cornflour
  • 1 pinch black pepper, (to taste)

Method

  • Step 1

    Preheat the oven to gas mark 6.

  • Step 2

    Chop the leek, carrots, potatoes, sweet potatoes and courgette into small, bite size pieces and place in a casserole dish.

  • Step 3

    Pour stock on vegetables, put lid on and place in the oven for 30 minutes until the veg is nearly cooked (test firmness with a fork).

  • Step 4

    While veg is cooking, put slices of bread into a food processor (or tear into pieces if you don’t have one.)

  • Step 5

    Take the veg out of the oven and sprinkle in cornflour. Cornflour thickens the casserole so use more or less depending on how watery the sauce seems.

  • Step 6

    Cover top of casserole in breadcrumbs or small pieces of bread followed by grated cheese and return to the oven for 10-15 minutes, or until the cheese goes brown and bubbly.

  • Step 7

    Mash up to serve to your little one.

  • Mix up the vegetables to your baby’s taste, potatoes are great for texture but other than that, get creative! It’s a great way of introducing new veg into your baby’s diet.
