Mediterranean roast vegetables with cous cous

Roasted courgette and sweet potato brings a Mediterranean flavour to this cous cous recipe, suitable from 7 months

  • 1 pouch Heinz Cook At Home tomato and basil sauce
  • 75g dried cous cous, cooked according to instructions on packet
  • 75g sweet potato, chopped
  • 50g courgette, chopped


  • Step 1

    Place the chopped sweet potato and courgette on a baking tray and drizzle with a little olive oil. Roast at 220C/425F/Gas mark 7 for 30 minutes, turning occasionally. Chop finely.

  • Step 2

    Mix all the ingredients together.

  • Step 3

    Reheat to a safe temperature before serving.

  • Milk Free, Egg Free and Vegetarian.
