Annabel Karmel’s cinnamon almond granola

A delicious and nutritious recipe to boost your health in pregnancy



■ 250g rolled oats
■ 25g desiccated coconut
■ Half tsp ground cinnamon
■ 50g soft light brown sugar
■ Pinch of salt
■ 2tbsp sunflower oil, plus extra for greasing
■ 4tbsp clear honey
■ 50g flaked almonds (or other mixed nuts)
■ 75g ready-to-eat dried apricots, chopped
■ 50g raisins
■ 50g dried cranberries



1. Pre-heat the oven to 160°C, gas mark 3. Lightly grease a large baking sheet.

2. Put the oats, coconut, cinnamon, sugar and salt in a large bowl and stir together well. Drizzle over the oil and honey and stir until everything is combined thoroughly. Then stir in the flaked almonds.

3. Spread the mixture evenly onto the prepared baking sheet and bake for 20 minutes. Stir the mixture around and bake for a further 20 minutes. Stir the mixture again and bake for a final 5 to 10 minutes until lightly toasted.


4. Transfer to a large bowl and leave to cool. Stir in the dried fruits and store in an airtight container. Serve with yoghurt.
