Griddled Chicken Fingers

Preparation time: 25 minutes (including 20 minutes marinating)
Cooking time: 6 minutes
Makes 2-3 portions
Suitable for freezing
You’ll need:
1 chicken breast, skinned
½ garlic clove, finely chopped
1tsp fresh thyme, finely chopped
1tbsp olive oil, plus a little extra for griddling
1tbsp lemon juice
Baby carrots or broccoli florets, to serve
Method:
1. Cover the chicken breast with cling film or greaseproof paper and, using a mallet, flatten to 5mm (¼in) thickness. Cut the chicken into strips.
2. Mix together the garlic, thyme, olive oil and lemon juice and use to marinate the chicken for at least 20 minutes.
3. Heat the griddle and brush with a little oil. Remove the chicken from the marinade and griddle for 3 minutes each side or until cooked through.
4. Serve with finger food such as baby carrots or broccoli.
