Mediterranean lasagne

Ingredients

Chopped tomatoes

Onions

Tomato puree

Garlic or garlic puree

Courgettes

Peppers

Mushrooms

Lasagne sheets – dried or fresh

Cheese

Bechemel sauce mix & milk (or make your own)

Method

  • Step 1

    Add a small amount of olive oil to a saucepan and heat gently.

  • Step 2

     Chop one large onion and cook until soft.

  • Step 3

    Add the tomatoes, and puree and garlic.

  • Step 4

    Add the roughly chopped peppers and courgettes and heat through.

  • Step 5

    Layer with the lasagne sheets in a large dish, add the bechemel sauce, and top with a little cheese.

  • Step 6

    Bake for around 30 minutes at Gas Mark 7-8.

  • Step 7

    Serve with potato wedges and salad.
