Wholesome vegetable curry with red pepper, sweet potato and peas

A tasty teatime recipe for back to school


You’ll need:


500g jar medium curry sauce

2 250g pouches of express pilau rice

2 large sweet potatoes, peeled and cut into chunks

1 large red pepper, deseeded, cored and cut into chunks

150g frozen peas

Serves 4

What to do:

1 Cook the sweet potato in a pan of boiling water for 8 minutes until just tender.

2 Meanwhile, place the medium curry sauce, 75ml water, red pepper and peas in a saucepan and simmer for 10 minutes.

3 Drain the sweet potato and stir into the curry sauce.

4 Heat up two pouches of express pilau rice according to packet instructions and serve together.
