Simple cod kedgeree

Spicy rice, flaked cod and boiled egg make up this tasty and nutritious dish, suitable from 7 months

  • 100g long grain rice
  • 0.5 tsp mild curry powder
  • 1 whole egg
  • 300ml formula milk or cows milk
  • 2 tbsp parsley, finely chopped
  • 150g cod fillet, boneless

Method

  • Step 1

    Place the rice in a pan, add the curry powder and cook according to instructions on the rice packet.

  • Step 2

    Once it is cooked drain and set aside.

  • Step 3

    Hard boil the egg for around 8-10 minutes and then allow to cool before chopping into chunks

  • Step 4

    Pour the milk into a small pan and add the fish – make sure you have done a final check for bones. Stir in the parsley. After 3-4 minutes the cod should start to flake.

  • Step 5

    Mix together and either puree or mash to the right consistency.

  • Although eggs and fish can be included into your baby’s diet from 6 months, make sure the eggs bear the Lion Mark and that they are cooked thoroughly – the white and the yolk must be solid with no runny bits.
