Makes: 6/8 muffins
125g Greek yoghurt
200g plain flour
2 tsp baking powder and 1tsp bicarbonate of soda
Pinch of salt
Pinch of ground nutmeg
2 tsp ground cinnamon
100g soft brown sugar
1 large egg
100g butter, melted
1 tsp vanilla essence
150g chunky apple sauce
This is a quick and delicious muffin recipe and so easy to make. It is much more economical than buying a café muffin on the way to work or can be rustled up on a Sunday morning with ease.
1 Combine all dry ingredients in a bowl and in a separate bowl combine all of the liquid ingredients.
2 Mix the two sets of ingredients together until evenly combined.
3 Spoon into muffin tin lined with paper muffin cases.
4 Bake in a preheated oven at 200C / Gas Mark 6 for 12-15 minutes till golden and firm.
5 Cool slightly and lightly dust with icing sugar before serving.
