Annabel Karmel’s mini muffin mice

Let mice invade your kitchen with these fun party food cakes

For the muffins…

  • 150g self-raising flour
  • 2tbsp cocoa powder
  • 25g soft margarine
  • 25g caster sugar
  • 2 eggs, lightly beaten
  • 75g orange milk chocolate, chopped

For the decoration…

  • Red writing icing
  • Chocolate buttons
  • Mini sugar-coated chocolate buttons
  • Jelly beans

Method

  • Step 1

    Preheat oven to 180°C/gas mark 4. Line a mini muffin tray with 24 silicone muffin cases.

  • Step 2

    Sift the flour and cocoa powder into a bowl, and add the margarine, sugar and eggs. Beat using an electric hand whisk or free-standing mixer, until combined. Stir in the chopped orange chocolate. Spoon the mixture into the muffin cases – each one should be about two-thirds full.

  • Step 3

    Bake the cakes for 12–15 minutes, or until a cocktail stick inserted into the centre of one comes out clean.

  • Step 4

    Allow the cakes to cool for a few minutes in the tray, then transfer to a wire rack to cool completely.

  • Step 5

    Using the writing icing as glue, decorate the muffins with chocolate buttons for ears, mini sugar-coated buttons for eyes and jelly beans for noses. Finally, use the writing icing to draw on the mouths of the mice.
