Chicken, bacon and spinach sauce

Makes enough for 2 adults, a toddler and a baby



1tbsp olive oil
3 chicken breasts, skin removed and cut into chunks
60g (2½oz) packet bacon lardons
1 small red onion, finely chopped
400g tin cherry tomatoes
200ml (7fl oz) light vegetable stock
2 handfuls spinach



  • Step 1

    Purée the sauce. Sieve to remove any fibrous bits and check the temperature before serving.

  • Step 2

    Cook pasta shapes and put in a serving dish.

  • Step 3

    Pour over some of the sauce, including a couple of whole cherry tomatoes.

  • Step 4

    Top with the chicken and serve with grated Cheddar on top.

  • Step 5

    Season your remaining portion of basic sauce with salt, pepper and Tabasco, to taste, and add the parsley.

  • Step 6

    Cook pasta according to the packet instructions, then mix into the sauce.
