Marbled eggs with soldiers

Makes 4 portions. Preparation time 5 mins. Cooking time 10 mins, plus 45 mins to colour the eggs.



4 large, organic, free-range eggs

½-1tsp blue food colouring or a good pinch of saffron

4 slices wholemeal bread, toasted

Marmite, for spreading

4tbsp cream cheese


  • Step 1

    Cover the eggs with cold water and bring to the boil, cooking for 5 minutes from boiling. Tip away the hot water and cover with cold water until cool enough to handle.

  • Step 2

    Gently tap each egg to make cracks. Put the saffron or blue food colouring into a bowl and cover with hot water from the kettle. Put each egg in the water and leave to colour for at least 45 minutes.

  • Step 3

    Meanwhile, spread each slice of toast with the Marmite, then the cream cheese. Serve each egg with the toast cut into soldiers alongside.
