Step 2 Carefully scoop out the yolks, place in a bowl and mash. Step 3 Add the mustard (to taste) and mayonnaise to the mashed yolks and mix until smooth. Step 4 Spoon the mix back into the hollow of each boiled egg half and sprinkle with paprika. Step 5 To make the sails, cut the peppers into 3cm wide strips, then cut each strip into 3cm-sized squares before slicing diagonally in half to make the triangular sails. Step 6 Stick a sail into each egg filling and serve immediately.
